Suji cake- also popularly known as rava cake- is a moist and flavourful cake with plenty of semolina (suji), making this dessert a bright adaptation of normal cakes. It is a cake that is so easy to make, and it is quite apt for any occasion or simply in time for tea. A suji cake recipe is just ideal when you want to get something simple yet delicious! First of all, take your semolina and yoghurt, sugar, baking powder, and a splash of milk. Mix the semolina with the yoghurt and rest it for about 30 minutes. This is supposed to relax it to the point where semolina becomes soft and moist. Then, add sugar, baking powder, and some milk into the mixture. You can add whichever flavourings you prefer, like cardamom or vanilla. Add till you have uniformly batter. Add chopped nuts like almonds or cashews and dried fruits like raisins or coconut for more flavour, adding texture and sweetness. Set your oven to preheat at 175 C/350 F. Grease the baking pan and pour the batter into that pan. Over it, smooth out the top. Bake for about 30 to 35 minutes or till the toothpick comes clean from the centre part. Slice and serve when cooled completely, with a cup of tea or coffee on the side.
